Although when I start a novel I know how it will begin and end, I like to let the people within the story take me on a journey between those points without having a fixed plan.
When I begin to write a story, I usually know how things will end. It's the journey toward that point I must discover. The process is sometimes painful, but also exciting.
I do think some games are works of art, although their medium is visual rather than verbal. Both games and novels allow the reader/player to become a protagonist in the theater of the imagination. Both build worlds. In my opinion, the big difference between game and novel is in narrative structure. Communal role-playing games are open-plan without an end. A novel - at least the kind I write - has a closed structure with a beginning, a middle, and an end. I like that closed structure, and I feel I can say more with it.
Plotting is difficult for me, and always has been. I do that before I actually start writing, but I always do characters, and the arc of the story, first... You can't do anything without a story arc. Where is it going to begin, where will it end.
One, don't wait for inspiration, just start the damned thing. Two, once you begin, keep on until the end. How do you know how the story should begin until you find out where it's going?
Before I begin a novel I have a strong sense of at least one central character and how the story begins, and a more vague sense of where things may wind up, but at some point, if the novel is any good at all, the story and characters take on lives of their own and take over the book, and the writer has to be open to that.
When I start getting close to the end of a novel, something registers in the back of my mind for the next novel, so that I usually don't write, or take notes. And I certainly don't begin. I just allow things to percolate for a while.
But when I say it isn't meant for anyone's eyes, I don't mean it in the sense of one of those novel manuscripts people keep in a drawer, insisting they don't care if anyone else ever reads it or not.The people I have known who do that, I am convinced, have no faith in themselves as writers and know, deep down, that the novel is flawed, that they don't know how to tell the story, or they don't understand what the story is, or they haven't really got a story to tell. The manuscript in the drawer is the story.
I have to know the killer, the victim and the motive when I begin. Then I start to create the characters and see how the novel takes shape based on what these people are like.
Writing an essay is like a school assignment: I have my topic, I organize my thoughts, and I write it. I have complete control over what I'm doing. Writing a novel is like setting out on a journey without knowing who or what I'll encounter, how long it's going to take, or where I'm going to end up.
I never start a section of the story without knowing how it will end. I also consciously try to shape the story as though it were a movie.

You can increase the odds of spotting the weak points in your approach if you really think about the end-to-end business model you plan to follow - how you plan to create, capture, and deliver value.
A man who is not born with the novel-writing gift has a troublesome time of it when he tries to build a novel. I know this from experience. He has no clear idea of his story; in fact he has no story. He merely has some people in his mind, and an incident or two, also a locality, and he trusts he can plunge those people into those incidents with interesting results.
