Sentimentalising is anathema, as far as I am concerned. It leads you into ethical problems about violence and killing and eating meat. The whole world becomes topsy-survy if you impose moralities that were evolved within human society on what a blowfly or what a parasite does... there are lots of emotions you can deduce from an animal's behaviour that are correct, but when you start saying it's feeling guilty or thinking or a loved one or mourning, you must be very careful of those feelings.
The whole underside of our society has always been violence and still is. Churches, laws - everybody seems to think that man is a noble savage. But he's only an animal. A meat-eating, talking animal. Recognize it. He also has grace and love and beauty. But don't say to me we're not violent.
This isn't animal experimentation, where you an imagine some proportionate good at the other end of the suffering. This is what we feel like eating. I understand, of course, that grain-fed meat is not the cause of the world hunger problem - and eating some of it doesn't directly take food out of the mouths of starving people - but it is, to me, a symbol and a symptom of the basic irrationality of a food system that's divorced from human needs. Therefore, using less meat can be an important way to take responsibility. Making conscious choices about what we eat, based on what the earth can sustain and what our bodies need, can help remind us that our whole society must begin to balance sustainable production with human need.

But since heart disease, cancer, diabetes, osteoporosis, etc. usually take many years to develop, we are able to separate them from their cause (or contributing factors) and go on happily eating an animal-based diet.

I think we have grave problems. I am very much concerned about environmental questions, even though in Finnish society, we are not facing the most urgent problems.
I stopped eating beef at 13 and stopped eating all meat a few years ago. I would feel guilty that what was on my plate was walking around yesterday. Either I could live with that or stop eating meat. I choose the latter, and I'm happier for it.
Although we are all the same in not wanting problems and wanting a peaceful life, we tend to create a lot of problems for ourselves. Encountering those problems, anger develops and overwhelms our mind, which leads to violence. A good way to counter this and to work for a more peaceful world is to develop concern for others. Then our anger, jealousy and other destructive emotions will naturally weaken and diminish.
