It is impossible not to notice that our world is tormented by failure, hate, guilt, and fear.
Never feel guilty. Don't hold yourself back by guilt or fear. No other species in the entire world deals with guilt. Guilt is a bizarre emotion that makes you feel bad about decisions that you make.
Fear and guilt are your only enemies. If you let go of fear, fear lets go of you. If you release guilt, guilt will release you. How do you do that? By deciding to.
There are only two emotions: love and fear. All positive emotions come from love, all negative emotions from fear. From love flows happiness, contentment, peace, and joy. From fear comes anger, hate, anxiety and guilt. It's true that there are only two primary emotions, love and fear. But it's more accurate to say that there is only love or fear, for we cannot feel these two emotions together, at exactly the same time. They're opposites. If we're in fear, we are not in a place of love. When we're in a place of love, we cannot be in a place of fear.
When I walk into a market I may see a different cut of meat or an unusual vegetable and think, ‘I wonder how it would be if I took the recipe for that sauce I had in Provence and put the two together?’ So I go home and try it out. Sometimes my idea is a success and sometimes it is a flop, but that is how recipes are born. There really are not recipes, only millions of variations sparked by someone’s imagination and desire to be a little creative and different. American cooking is built, after all, on variations of old recipes from around the world.

One of the troubles with food is that people take themselves too seriously. This is why I'm very happy for people to change my recipes, alter them, replace one ingredient for another.
So great becomes the fear of losing what we have that many of us rush back to hide under the temporary shelter of convention rather than follow the path of self-discovery wherever it might lead. Given adequate time and sufficient fear, we may hide so long that we hardly notice we're slowly suffocating.
Food = joy ... guilt ... anger ... pain ... nurturing ... friendship ... hatred ... the way you look and feel.... Food = everything you can imagine.
Recipes are important but only to a point. What's more important than recipes is how we think about food, and a good cookbook should open up a new way of doing just that.
Taking dishes straight off the restaurant's menu and putting them into a cookbook doesn't work, because as a chef you have your own vision of what your food is, but you can't always explain it. Or you can't pick recipes that best illustrate who and where you are and what you're doing. And if the recipes don't work, you don't have a book.
The confidence in the unlimited power of science is only too often based on a false belief that the scientific method consists in the application of a ready-made technique, or in imitating the form rather than the substance of scientific procedure, as if one needed only to follow some cooking recipes to solve all social problems. It sometimes almost seems as if the techniques of science were more easily learnt than the thinking that shows us what the problems are and how to approach them.
But you must not change one thing, one pebble, one grain of sand, until you know what good and evil will follow on that act. The world is in balance, in Equilibrium. A wizard's power of Changing and Summoning can shake the balance of the world. It is dangerous, that power...It must follow knowledge, and serve need.
Fear! Fear again, for the first time since his 'teens. Fear, that he thought he would never know any more. Fear that no weapon, no jeopardy, no natural cataclysm, has ever been able to inspire until now. And now here it is running icily through him in the hot Chinese noon.
