When people arrive at El Bulli, everybody goes through the kitchen. It's a way of making them feel at home. When they leave, the only thing I ask is whether they've been happy. Everything in between, I don't particularly care.
El Bulli was created by 2,000 people that passed through it. And we didn't know that something big was happening. It was like a game in a way. You didn't really know how it was going to end up, and people who would leave, they would take a piece of it with them, but they would leave another piece behind.
The experience of being in between-between the time we leave home and arrive? at our destination; between the time we leave adolescence and arrive at adulthood; between the time we leave doubt and arrive at faith. It is like the time when a trapeze artist lets go the bars and hangs in midair, ready to catch another support: it is a time of danger, of expectation, of uncertainty, of excitement, or extraordinary aliveness.
People need to understand. If they go to a show on Broadway and find seventy people working but only fifty spectators, how much would the ticket cost? That's what El Bulli's about. There are seventy actors who are playing for just fifty spectators. Is the price expensive? It's relative. How much does a normal dinner at a five-star hotel restaurant cost? Four hundred dollars. It's the same as El Bulli. But you can also think of it this way: How much would it cost to eat something that nobody else is eating?
I think maybe 50 years ago people and businesses felt like they had to choose between maximizing profits and making customers happy or making employees happy, and I think we're actually living in a special time where everyone's hyperconnected, whether through Twitter or blogs and so on. Information travels so quickly that it's actually possible to have it all, to make customers happy through customer service, to make employees happy through strong company cultures, and have that actually drive growth and profits.
When you're going through something, whether it's a wonderful thing like having a child or a sad thing like losing somebody, you often feel like 'Oh my God, I'm so overwhelmed; I'm dealing with this huge thing on my own.' In fact, poetry's a nice reminder that, no, everybody goes through it. These are universal experiences.
I think that it drives from an emotional connection with everybody that pulls you through all of those events, whether it's the events or what would be more the action, or I guess the visual effects side of it. So it always starts with me from - emotionally - 'Why do you care about the people who are going through what they're going through?' Because it takes a hell of a lot to put them through that. So you better care for them when they're doing it.
The sad thing is most people have to check with someone before they do the things that make them happy. We're all passing through; the least we can do is be happy, and the only way to do that is by being selfish.
Throughout the history of el Bulli, there have been many changes in its organisation or philosophy. This is another one of those moments. There will be risk, and freedom, and creativity. But there won't be opening hours, or reservations, or routines.
I think you have to satisfy yourself first and foremost. There have been records I've been really, really pleased with that haven't connected with people. But I felt good about them. If you're making music, you must want to turn other people on to it, whether you're number one in the charts or number 60. I don't know, that's a commercial thing, but just the fact that other people like you... there's no point in making music, otherwise. Otherwise you might as well make it in your bedroom and leave it there.
All of us have been through relationships; there have been periods of time when we've been single. It's something that everyone experiences. It's a matter of making that observation and then start to ask questions about it: Why is it like that? And why do we feel that? And why are we organized this way? Isn't there any other way?
