The problem is that restaurants have assumed that kids don't want to eat anything other than chicken nuggets or fast-food burgers, but they do. They want to eat things that taste good.
Chefs hate desserts. The smartest thing a chef can do is hire a great pastry chef. Cooking savory food is all about feel - you season something, you taste it, you go back in and adjust, more butter, more olive oil, more acid, whatever you want to get it to taste the way you want. Pastries are like a science project. To me, the greatest chefs are the ones who have the greatest feel for food, while the greatest pastry chefs have to be people that are extremely precise.
Like so many other kids with special needs, I have been bullied. Kids in elementary school made me eat sand, and those same boys would walk behind me, teasing me. Finally I had enough, and I told them to grow up.
I have eaten too many types of cuisines and food. For me, every dish has their own taste and story. I can't pick the best dish I've ever had, simply because I enjoy all food types!
What you can say, what French parents say to their kids is, 'You don't have to eat everything, honey, you just have to taste it.' And it's that tasting little by little by little that gets kids more familiar with the food and more comfortable with it and more likely to eat it the next time.
