I think it's possible to have food that's healthy, that's good for you to eat, that's also inexpensive. We don't have to have this cheap, unhealthy food being so aggressively promoted.
Our big problem is that high-calorie, special-occasion foods like cakes, fried foods, etc. have become so cheap and easy that we eat them every day. Make them special again by cooking them yourself. You won't do it every day, I promise.
Much more has to be done to democratize the food movement. One of the reasons that healthy food is more expensive than unhealthy food is that the government supports unhealthy food and does very little to support healthy food, whether you mean organic or grass-fed or whatever.
Cheap labor is a small part of the problem at work here. If it were only cheap labor, America would be in trouble. Because it's other things, too, we have a great chance to turn it around. We need to realize that these industrial methods of farming have gotten us used to cheap food. The corollary of cheap food is low wages. What we need to do in an era when the price of food is going up is pay better wages. One of the problems is that the US government supports unhealthy food and does very little to support healthy food. I mean, we subsidize high fructose corn syrup. We subsidize hydrogenated corn oil. We do not subsidize organic food. We subsidize four crops that are the building blocks of fast food. And you also have to work on access. We have food deserts in our cities. We know that the distance you live from a supplier of fresh produce is one of the best predictors of your health.
