I think there are two ways of eating, or cooking. One is restaurant food and one is home food. I believe that people have started making food that is easy that you want to eat at home. When you go out to a restaurant, you want to be challenged, you want to taste something new, you want to be excited. But when you eat at home, you want something that's delicious and comforting. I've always liked that kind of food - and frankly, that's also what I want to eat when I go out to restaurants, but maybe that's me.
But it's really hard to eat good when you're traveling because you see fast food and you want to go to this restaurant and that restaurant.
A good taste in art feels the presence or the absence of merit; a just taste discriminates the degree--the poco piu and the poco meno. A good taste rejects faults; a just taste selects excellences. A good taste is often unconscious; a just taste is always conscious. A good taste may be lowered or spoilt; a just taste can only go on refining more and more.
What nobody tells people who are beginners… is that all of us who do creative work, we get into it because we have good taste. But there is this gap. For the first couple years you make stuff, and it’s just not that good. I beg young people to travel. If you don't have a passport, get one. Take a summer, get a backpack and go to Delhi, go to Saigon, go to Bangkok, go to Kenya. Have your mind blown. Eat interesting food. Dig some interesting people. Have an adventure. Be careful. Come back and you're going to see your country differently, you're going to see your president differently, no matter who it is. Music, culture, food, water. Your showers will become shorter. You're going to get a sense of what globalization looks like.
I can go into a restaurant; I might have to go a few times, taste something, love it and figure out exactly what is in there, and go home and duplicate it.
If you have good food, people will come to your restaurant.
You ever go out to a restaurant now? You can get quality food - you can go out and get the best food that was available 20 years ago. They'll put it on a plate, you'll sit in a plastic chair because nobody values the chair, the white tablecloth, the maître d', but they'll put on your plate some great food for what used to be available at Applebee's prices. There are some really nice things going on, some external values being delivered to people.
My biggest pet peeve is when you go to a fine restaurant, and it's like a mausoleum inside. Good food should be joyful. There should be laughter and chatter, not people sitting there like they're in a funeral-parlor waiting room.

If I go to a restaurant the last thing I want to do is sit with somebody I don't like because then the food always tastes awful.
When I eat cilantro, it's like someone sprayed perfume down my throat. It closes up my throat, even if there's only a little piece. I like Mexican food, and I'll go out to a Mexican restaurant and tell them, 'Look, I will die if you get cilantro in my food.' Then there's always that one little piece that falls in, and I gag.
