Only one same reason is shared by all of us: we wish to create worlds as real as, but other than the world that is. Or was. This is why we cannot plan. We know a world is an organism, not a machine. We also know that a genuinely created world must be independent of its creator; a planned world (a world that fully reveals its planning) is a dead world. It is only when our characters and events begin to disobey us that they begin to live.
In the world at large, people are rewarded or punished in ways that are often utterly random. In the garden, cause and effect, labor and reward, are re-coupled. Gardening makes sense in a senseless world. By extension, then, the more gardens in the world, the more justice, the more sense is created.
So much of literary sci-fi is about creating worlds that are rich and detailed and make sense at a social level. We'll create a world for people and then later present a narrative in that world.
