My daughter Alexandra once told me, "Mother, you're a pioneer. Now, hardly anybody cooks, but you were one of the first to stop." After 20 years of cooking, I started to appreciate the value of other people's work. So I would, say, go get a duck in Chinatown. I always had the salad and set the table, but I didn't have to clean the pots.
21 years ago when I started cooking, to be a cook meant that you were going to stay in the basement. Being a chef, you would never be on a book tour. You could never dream that 20 years later on you would be on a book tour. It wasn't a part of your dreams because it was just totally unrealistic. When did cooks - restaurant cooks, not cooks that have 15,000 television shows - when did cooks become part of pop culture the way they are?
When new cooks come to work for me, they obviously make mistakes at the beginning or there's some messiness to the presentation. What I always say to them is: 'If you were cooking this for your mother or your girlfriend, would you make those mistakes?'
When I started in the business years ago, people would always say, 'You better get as much work as you can now, because once you get over 40, it's over.'
If my son came to me years from now and told me, 'I'm gay,' I'd say, 'That's wonderful. I'm so glad you know who you are.' But if he said, 'I want to be a woman,' I would say, 'Ahhh. This is gonna be hard. Let's get started.' Because it doesn't matter that that's where happiness lies - it's on the other side of a lot of struggle.
I first started actually playing guitar when I was eleven years old. I had some neighborhood friends who told me they were starting a band and needed a guitarist. I told my folks, and by the next day I had a guitar lesson set up with a local teacher.
I think back to some of the pots we made when we first started our pottery, and they were pretty awful pots. Looking back on it now, I understand why that was not possible [to express ourselves], because the pottery employed a dozen people, not all of whom are making pots. And these people had families, children, and they had to have a wage that would allow them to raise their family and they had to get a paycheck every Friday afternoon. So if we had not made pots that would sell it, would not have been possible for these people to be employed.
I had always planned when I started directing in 1970 that after a few years I'd get tired of looking at myself on the screen and say: "Hey, let's not do that any more." But then every once in a while something pops up. I'm not saying it won't happen again but probably the odds get less as you set yourself for roles that fit your age group.

I find that a duck's opinion of me is influenced by whether or not I have bread. A duck loves bread, but he does not have the capability to buy a loaf. That's the biggest joke on the duck ever. If I worked at a convenience store, and a duck came in and stole a loaf of bread, I would let him go. I'd say, "Come back tomorrow, bring your friends!" When I think of a duck's friends, I think of other ducks. But he could have, say, a beaver in tow.
