We all need each other in publishing to make publishing work for authors in a variety of formats now and in the future. Anyone who thinks publishers don't bring anything to the table has a very narrow view and lack of knowledge about the industry as a whole.
The Internet obviously changes things; we've seen that in the music industry above all else. As an author, I'm now having to deal with the fact that it's happening in the publishing industry as well. And publishing is going through a very difficult time. Some view it as positive, some negative, but nobody really knows how to deal with it. If you're an author it looks very challenging because your work can be pirated so easily and there's very little you can do about it.
I enjoy writing. Publishing... not so much. I've been lucky to work with some very talented people in the publishing world, and the print industry has allowed me to write full time.
As for the multiple editions, in the case of a truly great writer - Shakespeare, Emily Dickinson, Proust, someone with a canon - there is often a "variorum" edition of the work that presents its variants. I think publishing most other writing that way would be impossible, economically, for publishers, and very ill-advised for authors.
I was in the second year of my PhD when I first had the idea - I'd recently started working as a translator, which meant firstly that I was hearing about amazing-sounding books from other translators, and also that I was getting enough of an insider's view of the publishing industry to be aware of all the implicit biases that made it so difficult for these books to ever get published, especially if they weren't from European languages (harder to discover, editors can't read the original, lack of funding programmes, authors who don't speak English).
The publishing industry provides a viable channel which enables a wide distribution of books that we're not seeing in any other way. Unfortunately, self-publishing doesn't have that.

We hope that our annual anthology might provide an upsurge in interest for European fiction and then, as we publish it every year, become a habit to many readers.
In my view, the ebook world for both established and new authors is a terrific new and exciting format. It is a format that will bring forth many new writers to publishing.
