I don't think people realize, when they're just getting started on an eating disorder or even when they're in the grip of one, that it is not something that you just "get over." For the vast majority of eating-disordered people, it is something that will haunt you for the rest of your life. You may change your behavior, change your beliefs about yourself and your body, give up that particular way of coping in the world. You may learn, as I have, that you would rather be a human than a human's thin shell. You may get well. But you never forget.
First, educate yourself about what a vegan diet entails and why it is beneficial to your health. You need to understand and embrace the philosophy or you will not be able to make such a drastic dietary change. Secondly, make the change over time. Don't try and "go cold turkey"; you will shock your system and you will develop cravings that you may not be able to fight off. If you take your time and let your body adjust you will be eating a completely different diet before you realize it.
Education is power, it changes your whole life, it can create a life for yourself. So the more educated you are, the more you learn about what you care about, you become a more caring person. And if you can speak about what you care about to a person you disagree with, without denigrating or insulting them, then you may actually be heard. And you may even change their mind, or they may change yours.
I'm not asking any of you to make drastic changes to every single one of your recipes or to totally change the way you do business. But what I am asking is that you consider reformulating your menu in pragmatic and incremental ways to create healthier versions of the foods that we all love.
