A Quote by Samin Nosrat

There are two proper ways to use garlic: pounding and blooming. Neither involves a press, which is little more than a torture device for a beloved ingredient, smushing it up into watery squiggles of inconsistent size that will never cook evenly or vanish into a vinaigrette. If you have one, throw it away!
The higher the temperature you use to cook, the faster energy is transferred, and the less evenly your meat cooks. Conversely, the more gently a steak is cooked, the more evenly it cooks.
I am very moody when I cook. I cook according to the way I feel at the moment. A little of this, a little of that, and almost always a coupcon of garlic. I never proceed by the rules.
Some degree of abuse is inseparable from the proper use of every thing; and in no instance is this more true than in that of the press. It has accordingly been decided, by the practice of the states, that it is better to leave a few of its noxious branches to their luxuriant growth, than, by pruning them away, to injure the vigor of those yielding the proper fruits.
Pounding fragrant things - particularly garlic, basil, parsley - is a tremendous antidote to depression. But it applies also to juniper berries, coriander seeds and the grilled fruits of the chilli pepper. Pounding these things produces an alteration in one's being - from sighing with fatigue to inhaling with pleasure. The cheering effects of herbs and alliums cannot be too often reiterated. Virgil's appetite was probably improved equally by pounding garlic as by eating it.
My favorite is the garlic press. I think it's beautiful as an object. But the awkward part of it all is that I don't use it much because I'm allergic to garlic.
I simply believe food is too good to throw away - and Christmas leftovers can be a gastronomic opportunity for the well-skilled kitchen forager. With a little imagination, there are a million ways to use up leftovers rather than bin them.
One of the challenges faced by the little press like Little Island Press is as always, tricking people into buying books. I'm told that the next generation will be more interested in "experiences" than in tangible objects like books. That's a pretty big challenge to a publisher of any size.
Whatever separates you from the Truth, throw it away, it will vanish anyhow.
Garlic is divine. Few food items can taste so many distinct ways, handled correctly. Misuse of garlic is a crime...Please, treat your garlic with respect...Avoid at all costs that vile spew you see rotting in oil in screwtop jars. Too lazy to peel fresh? You don't deserve to eat garlic.
I use the word nursing for want of a better. It has been limited to signify little more than the administration of medicines and the application of poultices. It ought to signify the proper use of fresh air, light, warmth, cleanliness, quiet, and the proper selection and administration of diet-all at the least expense of vital power to the patient.
[Consider] a fence or gate erected across a road] The more modern type of reformer goes gaily up to it and says, "I don't see the use of this; let us clear it away." To which the more intelligent type of reformer will do well to answer: "If you don't see the use of it, I certainly won't let you clear it away. Go away and think. Then, when you can come back and tell me that you do see the use of it, I may allow you to destroy it."
Sometimes we forget to be grateful until we survive a trauma. For example, after having the flu when you ache all over, throw up for hours, and have little people pounding in your head with hammers, it is sheer bliss just to eat a piece of toast, walk outside without getting dizzy, and breathe fresh air. Part of the journey toward joy involves not waiting around for trouble, but being continuously aware of our blessings.
Young men, in the conduct and manage of actions, embrace more than they can hold; stir more than they can quiet; fly to the end, without consideration of the means and degrees; pursue some few principles, which they have chanced upon absurdly; care not to innovate, which draws unknown inconveniences; use extreme remedies at first; and, that which doubleth all errors, will not acknowledge or retract them; like an unready horse, that will neither stop nor turn.
Sex is two plus two making five, rather than four. Sex is the X ingredient that you can't define, and it's that X ingredient between two people that make both a man and a woman good in bed. It's all relative. There are no rules.
Maya Angelou observed you cant use up creativity. The more you use, the more you have. Sadly, too often creativity is smothered rather than nurtured. There has to be climate in which new ways of thinking, perceiving, questioning are encouraged.
Though our smoke may hide the Heavens from your eyes, It will vanish and the stars will shine again, Because, for all our power and weight and size, We are nothing more than children of your brain!
