I think what I do differently from a lot of TV chefs is that I break down barriers and make fine food more accessible to the regular person, who might be intimidated. I try hard, particularly with wine, to make it not intimidating. It's sort of a teaching job.
I'm a stoic. When something goes down the pan, enjoy it. Make the best out of a bad job. I'm not the sort of person who would break down and weep if my trousers split. It is funny, and I don't really get embarrassed.
To be asked to do the pairing menus by Alamos Wineries in Argentina [was the most interesting opportunity]. There are so many chefs out there, and so if you were to say, "The dude who used to host Man V. Food is doing pairing for Jim Beam," you'd say, "Okay, that's kind of conceivable." If you're talking about the dude from Man V. Food is doing pairings for fine wine, then I think people might not necessarily anticipate that.
I think wine is such a big universe that it's kind of like food - it's intimidating to a lot of people, myself included.
I think that more and more and more really talented restauranteurs and chefs from the fine dining world are going to try their hand at fine casual. They're going to say, 'Why not us?'
Space travel is a dream for many men and women. I think my trip will be perceived differently by different genders because for women, a lot of time, not only space travel, it's not accessible to everyone, but is even less accessible to women, there are a lot more barriers for them especially if they live in countries where things like space travel, engineering, any science and technology-related field would be considered a more male-dominated field. And so I want to show them that there is nothing preventing woman, or making them less qualified to be involved in any of these fields.
One of my beliefs as a filmmaker is that if you can make somebody laugh, you can make them listen. With laughter, you can get somebody's guard down, you can open them up to listening to you. They don't feel like they're being preached to or talked down to. I think it helps, it makes really hard to understand information a little more accessible and palatable. And at the end of the day, it makes a movie a little more fun. It doesn't feel so heavy handed.
I think it speaks a lot to Coach Kidd and my teammates to trust me as a rookie to make plays down the stretch. When they put that confidence in you, it's hard not to try to make plays.
The good news about showcasing chefs and the TV shows is they've attracted a lot more smart kids to the profession than 30 years ago. On the downside, though, these young chefs all say they want their own restaurant and their own TV show.
I can't make wine simple. But I can make it fun and beautiful, instead of esoteric and intimidating. The minute you realize it's OK to stumble along like the rest of us, asking questions and paying attention to your own reactions, then you'll begin what I hope will be a lifelong love affair with wine.
The definition of horror is pretty broad. What causes us "horror" is actually a many splendored thing (laughs). It can be hard to make horror accessible, and that's what I think Silence of the Lambs did so brilliantly - it was an accessible horror story, the villain was a monster, and the protagonist was pure of heart and upstanding so it had all of these great iconographic elements of classic storytelling. It was perceived less as a horror movie than an effective thriller, but make no mistake, it was a horror movie and was sort of sneaky that way.
I think there's a reason why wine figures into so many religions. There's something transcendent about it. It's sort of the way that music is more than the sum of its parts. You have all these elements that make up the terroir that wine can communicate.
We're teaching our kids that attributes as vague and relatively meaningless as a toothy smile or a fine head of hair make a fine statement about a person.
You try to break it down to weeks at a time otherwise you sort of make yourself crazy spinning out going from one....you just can't get your head around one of them fully. So I'm more task oriented. I think food trucks are the new answer to American fast food. The idea of raising two or three million dollars and going through red tape to open a restaurant, there's lots of barriers to success. There's a really easy jumping place for food trucks. It's very hip and acceptable for new chefs to open a food truck first.
