The two things that are going to make you a better baker without even trying are a scale and a thermometer in your oven.
It's a lot easier to figure out how to scale something that doesn't feel like it would scale than it is to figure out what is actually gonna work. You're much better off going after something that will work that doesn't scale, then trying to figure how to scale it up, than you are trying to figure it all out.

That happy accident was always in the back of mind.

The generals have a saying: "Rather than make the first move it is better to wait and see. Rather than advance an inch it is better to retreat a yard." This is called going forward without advancing, pushing back without using weapons. There is no greater misfortune than underestimating your enemy. Underestimating your enemy means thinking that he is evil. Thus you destroy your three treasures and become an enemy yourself. When two great forces oppose each other, the victory will go to the one that knows how to yield.
I'm trying to make things better, and you have people outside who are constantly trying to make things terrible all the time. Why? Because humiliation sells.
