After all these years of cooking and writing recipes, I am still amazed every time I notice how even the minutest of variation in technique can make a spectacular difference.
There are three reasons why this book came into being. First, throughout the 33 years I've been writing recipes - although I'm not vegetarian myself - I have greatly enjoyed creating vegetarian recipes, and cooking and serving them at home.

Years ago, even prior to 9/11, I did a movie called "The Siege." I did a lot of research with the FBI and the CIA. And I was amazed at that time (I guess we might all know it now) how little information they shared with each other. So after that, I'm not surprised by anything.
I try to make what I have written tighter, stronger and more precise, eliminating every element that's not doing useful work. Then I go over it once more, reading it aloud, and am always amazed at how much clutter can still be cut.

Even cooking at home, the difference between my wife cooking and me cooking is major. When my wife cooks, the kitchen looks like a disaster. When I cook it's completely clean and organized and it doesn't look like anyone has been cooking in there.
