Whereas much of what we know from ancient history is derived from one or two sources, we have no fewer than nine ancient sources, inside and outside the New Testament, corroborating the disciples' conviction that they encountered the resurrected Jesus. That's an avalanche of data.
On at least four separate occasions and recorded in the four Gospels the Lord Jesus called His disciples to deny their soul life, deliver it to death, and then to follow Him.
The gospels were, in fact, written anywhere from forty to a hundred years after Jesus, and their authors attempted to demonstrate that Jesus could be seen to fulfill various Old Testament pronouncements.
The Bible is a collection of writings by lots of different people written over maybe a thousand years, from a number of centuries before Jesus to a century after Jesus. I often like to refer to it as "the Scriptures" to make that point about it being lots of writings that were originally separate. In his book The Quest of the Historical Jesus, the most definitive study that's ever been done on the subject, Albert Schweitzer admitted that there isn't a shred of conclusive proof that Christ ever lived, let alone was the son of God. He concludes that one must therefore accept both on faith.

All archaeologists in Israel and Palestine make use of the New Testament Gospels. They do this because the Gospels exhibit verisimilitude. In short, the Gospels help archaeologists know where to dig and they help archaeologists understand what they unearth. The 2nd-century Gospels and Gospel-like writings rarely exhibit verisimilitude, so archaeologists rarely appeal to them.
